There are many comfort layers or materials used to construct a mattress. Some are used for the quilting that holds everything together and some are used to alter the feel of a mattress. Most new mattresses constructed by Sealy, Stearns and Foster, and Simmons Beautyrest use either latex or memory foams to provide a long lasting sleep surface that withstands years of use. Each manufacturer has their own formulas and criteria unique to their company. Of the two most widely used materials latex allows you to sleep on top of the mattress while memory foam lets you sink into the mattress slightly and cradles you somewhat. Using these two quality materials or a combination of the two manufacturers have found a way of providing a wide range of comfort levels. Be sure to try both latex and memory foams before making a final decision. My only other advice on the matter is to consider how long you expect to keep your mattress, the coil system and the cost involved.
